Basbousa (Semolina Cake)
Ingredients:
- 2 cups semolina flour (400 grams)
- 1/2 teaspoon baking powder (4 grams)
- 1/2 cup sugar (130 grams)
- 1/2 cup milk (135 grams)
- 1/2 cup vegetable oil (125 grams)
- 1 tablespoon finely grated coconut (12 grams)
- 2 tablespoons agave or heavy dessert syrup (60 grams)
Syrup ingredients:
- 1 1/2 cups sugar
- 2 cups warm water
- Juice of half a lemon
- 1/2 teaspoon vanilla sugar
Blanched almonds and coconut cream for serving (optional)
- Mix all the dry ingredients
- Add oil and fold till the consistency is similar to wet sand.
- Add the agave syrup and fold
- Add milk and fold again (don't kneed)
- transfer into a baking tray and spread the mixture forming a 1.5-2cm thick layer.
- decorate with blanched almonds.
- Bake at 200°C in the middle rack till the top is brown.
- Prepare the syrup by adding the sugar, water and vanilla sugar then bring it to boil.
- reduce the heat and add the lemon juice then take it off the heat after 10min
- Add the hot syrup to the hot basbousa and let it absorb it for 15min
- Cut and serve with coconut cream topping.
