Basbousa (Semolina Cake)

Ingredients: 
  • 2 cups semolina flour (400 grams)
  • 1/2 teaspoon baking powder (4 grams)
  • 1/2 cup sugar (130 grams)
  • 1/2 cup milk (135 grams)
  • 1/2 cup vegetable oil (125 grams)
  • 1 tablespoon finely grated coconut (12 grams)
  • 2 tablespoons agave or heavy dessert syrup (60 grams)
Syrup ingredients:
  • 1 1/2 cups sugar
  • 2 cups warm water
  • Juice of half a lemon
  • 1/2 teaspoon vanilla sugar
Blanched almonds and coconut cream for serving (optional)


      Cooking Instructions:
    1. Mix all the dry ingredients
    2. Add oil and fold till the consistency is similar to wet sand.
    3. Add the agave syrup and fold
    4. Add milk and fold again (don't kneed)
    5. transfer into a baking tray and spread the mixture forming a 1.5-2cm thick layer.
    6. decorate with blanched almonds.
    7. Bake at 200°C in the middle rack till the top is brown.
    8. Prepare the syrup by adding the sugar, water and vanilla sugar then bring it to boil.
    9. reduce the heat and add the lemon juice then take it off the heat after 10min
    10. Add the hot syrup to the hot basbousa and let it absorb it for 15min
    11. Cut and serve with coconut cream topping.
