Vegan Apple Cinnamon Cake Recipe

Ingredients: 
Apple Caramel
  • 1–2 apples 
  • 30 g vegan butter
  • 3 tbsp sugar
  • 2-3 tsp Cinnamon
  • 1 star anise
Cake batter
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 1 tbsp vanilla sugar (or 1 tsp vanilla extract or vanilla powder)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp vinegar
  • ⅓ cup neutral oil
  • 1 cups oat milk

    Cooking Instructions:
    1. Peel the apples and slice them evenly.
    2. Heat an oven-safe pan on medium-low heat. Add vegan butter, 3 tbsp sugar, cinnamon, and star anise.
    3. Once melted, arrange the apple slices in the pan, cover, lower the heat, and let them soften and caramelize.
    4. Preheat the oven to 180°C.
    5. In a bowl, mix all the dry ingredients. Add oil, vinegar, and oat milk, then mix until smooth.
    6. Pour the batter gently over the apples, starting from the edges so the apples stay centered.
    7. Turn off the heat and transfer the pan to the oven.
    8. Bake for about 30 minutes, until golden on top.
    9. Remove from the oven and immediately flip onto a plate. Let cool before slicing.
