Manaeesh recipe 

Ingredients:
Manaeesh dough (6 pcs):
  • 3 cups AP flour
  • 1 tbsp sugar
  • 2 tsp dry yeast
  • 1/2 tsp salt
  • 50 ml olive oil
  • 1 cup warm water

Toppings:
Zataar (for 2 manaeesh)
  • 3 tbsp zataar
  • 2 tbsp olive oil
  • Cheese (optional)
 Veg. mix:
  • 1 tsp tomato sauce
  • 50 ml water
  • 1/2 chopped tomato
  • 1/4 chopped onion
  • Chopped paprika
  • Olives
  • Salt & pepper to taste
  • Sriracha (optional)
 Arabic Sausage:
  • 1/3 of the seitan minced meat recipe
  • Chill flakes
  • Few drops of sriracha
  • 1 tsp unflavored coconut oil
 Minced "Beef":
Cooking instructions:
  1. In a bowl, mix 3 cups of flour with warm water in a 3:1 ratio.
  2. Add 1 tablespoon of sugar, 2 teaspoons of dry yeast, and half a teaspoon of salt. Mix quickly.
  3. Add 50 ml of olive oil and 1 cup of warm water. Mix everything together quickly with a spoon, then with your hand to create a dough ball.
  4. Cover the dough with plastic wrap and leave it in a warm place for 30 minutes.
  5. After 30 minutes, the dough should almost double in size. Use the pull and fold technique to create a ball, cover it, and let it rest for another 30 minutes.
  6. Meanwhile, prepare the toppings. Mix 3 tablespoons of zataar with 2 tablespoons of olive oil for the zataar mana'eesh. For the vegetable mana'eesh, mix tomato paste with water, chopped onion, chopped tomatoes, paprika, olives, salt, and pepper. For the Arabic sausage-flavored meat replacement mana'eesh, use vegan minced meat with chilli flakes, Sriracha sauce, and unflavored coconut oil. For the meat mana'eesh, use dark soy with chopped tomatoes and onion. Add pomegranate sauce for acidity, if desired. For the last mana'eesh, use ready-made vegan hotdogs and vegan cheese.
  7. After the second 30 minutes, divide the dough into six equal parts and roll each part into a ball. Flatten each ball with your fingers, then stretch the dough by hand or use a rolling pin to create a thin and consistent layer.
  8. Move the rolled dough to a heated pan sheet and add the toppings. Pinch a few holes in the zataar one so the dough doesn't bubble. For the zataar with grated vegan cheese, spread the mixture around to cover the whole thing.
  9. Bake in the oven at 250 degrees Celsius for about 5 minutes. Check frequently to ensure it doesn't burn.
  10. Repeat step 8 and 9 for the remaining mana'eesh with different toppings. Get creative with your toppings, you can even make sweet mana'eesh if desired.
