Ramadan sweets (Awama)

Awama - Lokimat - عوامة, لقيمات

Ingredients:
Batter
  • 2 cups of flour
  • 2 tbsp  corn starch
  • 1/4  tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp of sugar
  • Pinch of salt
  • 1/2 tsp of dry yeast
  • 300 ml of warm water
Syrup
  • 1 cup water
  • 1 cup sugar
  • squeeze of lemon or lime
Cooking instructions:
  1. In a mixing bowl, combine the dry and wet ingredients of the batter.
  2. Whisk all the ingredients together and cover the batter, setting it aside for an hour.
  3. After an hour, heat up enough amount of oil in a deep sauce pan.
  4. Transfer the batter into a piping bag, cut the edge and drop equal parts in the oil using scissors. oil the scissors to stop the batter from sticking to it.
  5. Fry till golden, remove from oil then re-fry after cooling down till it gets a brown color.
  6. Heat the water, sugar and lemon squeeze till it's reduced and has a honey-like texture, it will get thicker when it cools down so make sure to take it off the heat earlier than honey texture.
  7. Roll the Awama balls in the syrup, roll in sugar and cinnamon or cover with chocolate.
  8. Serve and enjoy.
