Umami - flavour enhancers

Seitan flavour enhancers (umami)

  • 1 kg sourdough bread
  • 7 g fresh yeast
  • 10 g sugar
  • 4 l water
  • 1 medium turnip
  • 2 sticks celery
  • 1 medium onion
Cooking Instructions:
  1. Cut the bread into cubes and roast them in the oven untill brown.
  2. mix the fresh yeast and sugar in some water to dissolve.
  3. add the 4l water, yeast, sugar and bread to a large bowl, cover it and let it set for 12 hours in room temperature.
  4. Remove the bread from the water and squeeze as much water as you can from the bread.
  5. Cover and let it set again for 2 days.
  6. Strain the water into a large pot and let it simmer and reduce.
  7. Cut the turnip, celery and onion into cubes and boil in some water.
  8. Strain the vegetable water into the reduced marmite and continue to reduce.
  9. Take the pot off the heat when you reach the desired thickness, the marmite will thicken more as it cools down.
