Palestinian Hummus

Hummus recipe

  • 400 g soaked & boiled chickpeas 
  • 1/2 tsp baking soda for boiling
  • 1 small garlic clove
  • Juice of 1 lemon
  • 1 tbsp tahini paste
  • 100 ml water
  • 1 tsp salt
  • 1/2 tsp citric acid
 Dagga (Palestinian topping): 
  • 1/2 Capsicum
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • Salt to your taste (1/4 tsp)
Cooking Instructions:
  1. Soak 400 g of organic chickpeas in water for 8 hours or overnight.
  2. Rinse the chickpeas and boil them in enough water till completely soft adding 1/2 tsp soda half way.
  3. Remove chickpea skin using cold water.
  4. Add all hummus ingredients into a high speed mixer and run till smooth and creamy.
  5. prepare Dagga by adding all ingredients in a food processor or hand blender.
  6. Serve hummus with Dagga, whole chickpeas, sumac and olive oil
