Vegan minced "beef" & meat replacement 

Seitan minced meat ingredients: 
  • 3/4 cup of vital wheat gluten
  • 1 tsp paprika - 1 tsp onion powder
  • 1 ml ginger powder
  • 1/2 tsp garlic powder
  • 1/2 tsp meat spice
  • 1/2 ml black pepper
  • 1/2 tsp salt
  • 2 1/2 tbsp nutritional yeast
  • 1/4 tsp cayenne pepper
  • 2 tbsp ketchup
  • 1 tbsp BBQ sauce
  • 1 tbsp pickled beetroot water (replace with 1/2 tbsp red wine vinegar & 1/2 tbsp water)
  • 1/2 tbsp red wine vinegar
  • 3 tbsp Oil
  • 1/2 tsp liquid smoke
  • 1 tbsp water
Cooking instructions:
  1. Mix the dry ingredients together.
  2. Add in the wet ingredients.
  3. Mix everything together with a fork, then with your hands if needed.
  4. Add 1 tbsp of water to combine everything together better.
  5. Crumble the mixture by hand into small pieces.
  6. Fry the mixture in a little oil on a medium heat pan.Keep moving the mixture until it gets a brown color on all sides.
  7. Use the mixture as a meat substitute in any dish, but make sure not to boil it, rather simmer it in a sauce so it doesn't become gooey.
Regular TVP meat ingredients:
  • 1 dl TVP (with enough water to cover it)
  • 1/2 cube of vegetable or vegan beef stock
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp liquid smoke
  • 1 tsp oil
  • 1/2 tbsp BBQ sauce
Dark TVP meat ingredients:
  • 1 small onion fried in a little bit of olive oil
  • 1 dl dark TVP (with enough water to cover it)
  • 1/2 tsp salt
  • 1 tsp paprika
  • Dash of black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of smoked salt
Soy chunks spice variations: 
In an Asian dish:
  • Paprika, garlic powder, ginger powder and soy sauce. 
 In Mediterranean/Middle Eastern cuisine:
  • Onion powder, black pepper, sage, lemon salt (citric acid), salt and liquid smoke. 
 Soy chunks showed in the video:
  • Onion powder, a dash of lemon salt, dash of ginger powder, liquid smoke, salt and some black pepper.
